I’ve only written one other “Taco Tuesday” post, but that doesn’t mean I haven’t been frequenting the various taco shops in Kansas City.

A few months back, my former coworkers Rob, Ruth and I chowed down at Cancun Fiesta Fresh in Old Westport during our lunch break. I pretty much always defer to Rob for taco expertise, and his choice of Cancun Fiesta Fresh did not disappoint.

The location is a bit random  — just a little shack in Old Westport — and it’s nothing to write home about as far as the interior is concerned. But those types of places always get me excited, because I can almost always count on them being so good when it comes to what’s on my plate. Speaking of…

Cancun Fiesta Fresh offers tasty street-style tacos with the usual suspects (asada, carnitas, pollo) as well as a few more adventurous tiny tacos, namely beef tongue and beef cheek.

Can you guess which ones I opted for?

If you guessed asada (marinated beef) and pollo (chicken), you’re correct…and if you added in a little beef cheek for good measure, you’re spot-on!

I enjoyed my dining experience at Cancun Fiesta Fresh — not just because it got me out of my chicken-and-steak safety zone, but because the flavors, textures and atmosphere of this little hole-in-the-wall taco shop were pretty much perfect. No soggy corn tortillas here!

Last week was my first week on my new team at work. Instead of just moving desks and switching coworkers within my company’s Kansas City headquarters, I packed up my boxes and completely switched buildings and computer networks (a bit hellacious!).

After a week of organized chaos, I made the most of my quiet weekend at home by watching some basketball, brunching with friends, catching up on reads, doing a bit of shopping and (hi!) writing in my blog after a short break. Cheers to new beginnings — and a full week of blog posts :)

{On Friday night, I sipped on "Moose-a-Ritas" aka blue margaritas at the Blue Moose with the teacher man during the KU-Baylor game. I couldn't help but judge the Baylor basketball uniform colors while I downed this electric-blue drink.}

{On Saturday morning, the teacher man and I headed to Ed and Terra's farmhouse in Kansas City, Kansas, to have brunch with friends (see Jess of Mimi and Chichi chowin' down behind me and my crazy cat lady coffee mug!).

{After game-night drinks on Friday and brunch cocktails on Saturday, I replenished with some Naked Green Machine juice. It's full of good stuff, and I love the copy on the packaging..."looks weird, tastes amazing!" So true.

recipe of the week | homemade hot salsa

I really like dips. Queso haunts my dreams, and my mom makes an unbelievable crab dip.

While both of those are incredibly delicious, they’re not exactly the healthiest dip options to constantly have in your fridge. A staple dip in my apartment, though, is homemade salsa. The teacher man and I take turns making salsa every other week, and while mine is usually spicier (I’m a hothead!), we both follow a similar recipe, adapted from his mother’s homemade salsa recipe.

We brought our homemade salsa to my friend Gina’s Super Bowl party last weekend, and it was a hit! It made me happy to hear that Gina’s hubby was excited that I left the salsa there for everyone to enjoy after we left, and I’m hoping it makes him even happier that I’m sharing the hot version of the recipe today so he can pester Gina to make it for him whenever he gets a salsa craving. (Adapt the ingredients to your spice level!)

Homemade Hot Salsa

Ingredients

1 pound/16 ounces organic crushed tomatoes
1 cup cilantro, chopped
1/2 of a green bell pepper, chopped
1/4 of a small onion, chopped
1/4 of a medium red jalapeno, chopped (keep seeds for extra heat)
1/4 of a medium green jalapeno, chopped (keep seeds for extra heat)
1 habanero pepper (discard half the seeds for less heat)
1/2 the juice of a lime, fresh squeezed
Small spoonful of garlic, minced
1/2 teaspoon kosher salt
1/2 teaspoon California Seasoned Pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon crushed red pepper (I use Penzey’s Very Hot Crushed Red Pepper, but it’s not listed online)
1/4 teaspoon ground cumin
Dash of Spanish Style Smoked Paprika
Dash of Mexican Seasoning
Dash of oregano
Dash of Tabasco or Cholula (I prefer Cholula)
Dash of olive oil (optional)
Dash of apple cider vinegar (optional)

1. Pour the crushed tomatoes into a large bowl. Set aside.

2. Chop the cilantro, onion, green pepper and jalapenos. If you want a finer salsa (less chunky), pulse these ingredients in a food processor with a little olive oil. Dump into the bowl of crushed tomatoes and mix.

3. Add all the spices into the bowl, mix together and enjoy! It’s usually better the next day because the crushed tomatoes have had time to absorb all the spices. Enjoy!
